Date molasses is a type of molasses that is made from date juice. Date juice is collected from the month of Bengali Agrahayan to the month of Falgun. In the heat of the date, the juice is turned into a thick and hard pataligur. According to the type, date molasses can be divided into Jhola molasses, Danagur, Patali, Chitagur etc.
Date juice and molasses are very tasty. In winter, date juice and molasses are used to make pies, different types of winter cakes, palm cakes, date molasses jilapi, etc.
 
খেজুর গুড় এক ধরনের গুড় যা খেজুরের রস থেকে তৈরি করা হয়। বাংলা  অগ্রহায়ণ মাস থেকে ফাল্গুন মাস পর্যন্ত খেজুরের রস সংগ্রহ করা হয়। খেজুরের উত্তাপে রসকে ঘন ও শক্ত পাটালিগুড়ে পরিণত করা হয়। ধরন অনুযায়ী খেজুরের গুড়কে ঝোলা গুড়, দানাগুড়, পাটালি, চিটাগুড় ইত্যাদি ভাগে ভাগে ভাগ করা যায়।
খেজুর রস এবং গুড় খুবই সুস্বাদু। শীতকালে খেজুরের রস ও গুড় দিয়ে পায়েস, বিভিন্ন ধরনের শীতকালীন  পিঠা, তালের পিঠা, খেজুর গুড়ের জিলাপি ইত্যাদি তৈরি হয়ে থাকে। স্বাদ আর মানভেদে খেজুরের গুড় পাটালি,, নলেন গুড়, হাজারী গুড় নামে পরিচিত।
